Vegan Taco Recipe
Vegans often miss eating their favorite meat and dairy recipes and are constantly on the lookout for good ones.
Vegan tacos are a great way for vegans/vegetarians, people who can’t eat beef or dairy, or anyone who enjoys trying new things.
“I think I would like this recipe because we can’t have red meat in the house,” said Bobbie Brownlee. “My family member has both Lyme disease and alpha gal…so no meat products whatsoever.”

It is a super quick recipe to make.

Ingredients
- 16 oz Beyond Meat
- 1 tablespoons avocado oil
- 1/2 cup yellow onion, small diced
- 3 garlic cloves, minced
- ¼ cup vegetable stock
Taco Seasoning Ingredients
- 4 tablespoon smoked paprika
- 3 tablespoons chili powder
- 2 tablespoon onion powder
- 1 tablespoon garlic powder
- 2 teaspoon black pepper
- 1 teaspoon coriander
- 1 teaspoon allspice
- 1 tablespoon oregano
- ½ teaspoon cayenne (optional)
For Taco Build
- 8 taco shells, hard or soft
- ½ cup pico de gallo, store bought or homemade
- 1 avocado
- ¼ cup cilantro, rough chopped
- 1 lime, cut into wedges
- 4 tablespoons vegan cheese (optional)
Utensils
- Small bowl and measuring spoons
- Medium sized saucepan
- Knife and cutting board
- Spatula and tongs
Step 1 : Blend You Taco Seasoning
In a small bowl, blend the seasonings together with a whisk or fork till evenly distributed.
Step 2: Sauté Taco Meat and Prep Your Toppings
To prepare your taco filling first place your skillet over medium-high heat. Add in the oil, and sauté the minced onion and garlic for 3 minutes until they begin to brown.
Add your beyond beef and sauté for 4 minutes, then mix in as much taco seasoning as you’d like.ta Start with 2-3 tablespoons, mix in more later-on. Sauté your vegan taco mix for 4 more minutes until the plant-based meat is cooked through and golden brown, add the vegetable stock and sauté for 1 minute.
To prepare your taco toppings, rinse the cilantro and roughly chop then set aside in a small bowl. Slice the lime into wedges and set aside as well.
You can purchase fresh pico-de-gallo pre-made at most grocery stores, but you can also used homemade
Step 3: Build Your Tacos
For 2 vegan tacos, measure out 2 ounces of filling per taco shell and top with 1 tablespoon of avocado, 1-2 tablespoon of pico de gallo, and garnish with fresh cilantro and vegan cheese.
