My dad always makes my great grandma’s Brown Sugar Pie for Thanksgiving, and my sister always looks forward to it because it is her favorite pie.
“I love when Dad makes Ma Mae’s Brown Sugar Pie because he has made it every year since we were kids,” said Madison Moore, junior at Virginia Wesleyan University.
Brown Sugar Pie:
Ingredients:
1 cup brown sugar
1/2 cup granulated sugar
1/2 stick butter, melted (or margarine)
2 tbsp. all-purpose flour
2 eggs
1/2 cup evaporated milk
1 unbaked pie shell (this can be homemade or store bought)
Pie Shell Ingredients:
1 1/4 cup sifted all-purpose flour
1/4 tsp. salt
5-6 tbsp. butter, softened
about 3 tbsp. cold water
To Make Pie Shell:
In a large bowl, combine sifted flour and salt. Slice the butter into pieces, then mash into flour with a potato masher. Gradually add water by the tablespoon. Press the dough into a ball without kneading it. Lightly flour a clean work surface, and roll the dough to fit the pan. Then roll the dough onto the rolling pin and gently roll over top of the pan. Cover the entire pan, sides included. Dock (poke small holes in the dough with a fork) the dough, to prevent bubbles in the crust while baking. Trim the edges of the shell and crimp the edges with a fork. Then set aside.
To Make Filling:
Preheat the oven to 350°F. Combine the sugars and the melted butter together in a large mixing bowl. Add the evaporated milk, eggs, vanilla, and flour. Mix vigorously to remove lumps. Place the pie shell into the oven then gently pour the mixture into the pie shell. Bake for 35-40 minutes. Then place on a wire rack to cool, this takes about 15-20 minutes.
