Let’s end up summer with a 1960s citrus cookie to cool us off.
Florida Cookies
Ingredients:
1/2 cup butter
1 cup sugar
zest of 2 oranges
1 egg, slightly beaten
1/2 cup orange juice, from the 2 oranges
3 cups sifted all-purpose flour
1/2 tsp. cinnamon
4 tsp. baking powder
Method:
Preheat the oven to 325°F. Combine flour, cinnamon, and baking powder. In a separate bowl, cream together butter, sugar, and orange zest. Gradually add egg, orange juice, and the combined dry ingredients to the creamed butter mixture. Mix thoroughly. Then drop from a teaspoon onto an ungreased cookie sheet and bake for 12 minutes until light brown.
Notes:
If you do not have a full 1/2 cup of orange juice, then add some water to make up the missing amount, this works just the same. When mixing the wet and dry ingredients, I add about a third of the dry ingredients and mix, then the egg, and mix. Then another third of the dry, and mix, then the orange juice and the last third of the dry, and mix. The recipe says an ungreased cookie sheet, but I placed parchment paper on the cookie sheet. It made the cooled cookies come right off the pan.
